Mashed Potatoes

Ingredients
- 5 lbs. organic red potatoes (approx. 3.5 lbs. peeled)
- 4 oz. butter
- 2 tsp. sea salt
- 1 1/4 cups milk optional
- chives
Directions
- Put the potatoes into a large pot and cover with cold water.
- Bring water to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes.
- Five(ish) minutes before the potatoes are done boiling, heat milk and butter in a small saucepan.
- When potatoes are soft to knife prick, drain them well and return to pot.
- Break potatoes up with electric hand mixer a bit then add the hot milk / butter and season with salt and pepper.
NOTE: When potatoes are ready, work quickly to puree/whip them while they are still hot.
If you like it creamier, just add a little more milk at the end and continue whipping with mixer.
