Uborkasaláta / Cucumber Salad

Ingredients
- 6 large English seedless cucumbers, peeled and sliced thin
- 1 tbsp salt
Dressing
- 1/2 cup sour cream
- ¼ cup white vinegar
- ½ tsp garlic powder or 1 clove garlic, minced
- ½ tsp pepper
- 2 tsp. sugar
- ½ teaspoon Hungarian Paprika
Directions
- Slice cucumbers as thin as possible, preferably using a mandolin
- Salt cucumbers and let stand in bowl for 1 hour
- In separate bowl, mix sour cream, vinegar, minced garlic, sugar, pepper and paprika and set aside
- Cucumbers will release a lot of moisture
- After an hour, take a handful of cucumbers and squeeze out as much juice as you can, continuing until they are all done
- Combine cucumbers and sour cream sauce and mix well
- Adjust salt if necessary and chill for an hour or two before serving
- Notes:
- Sour cream can be substituted with goat plain yogurt
- Sugar can be substituted with honey
- My Mother in law, Marton Mama, never used to add paprika in her recipe, so you can enjoy it either way!
