Krumplis Tészta / Potato Noodles

Ingredients
- 3 lbs. Potatoes, diced (peeled 2 lbs.)
- 1 Large Onion, Diced (3 cups)
- 1 1/2 Tbsp. Hungarian Paprika
- 1 Tbsp. Salt
- 1/3 cup Olive Oil
Noodles
- 16 oz. Egg Noodles
- ½ pot Water
- 1 Tbsp. Salt
- 1 Tbsp. oil
Directions
- Peel & dice potatoes, set aside in bowl covered in cold water
- Heat 1/3 cup olive oil and sauté onions for approx. 5 minutes over medium to high heat stirring frequently until transparent.
- When the onions are transparent add paprika, sauté, stirring for 20 to 30 seconds till paprika melts. Be careful to not burn paprika.
- Add 3 cups of water. Stir well to incorporate.
- Drain water off potatoes and add to pot. Add 1 Tbsp. salt and cook till potatoes are soft; about 20 to 30 minutes.
- While potatoes are cooking, bring another pot of water to a boil, add approx. 1 Tbsp. salt and approx. 1 Tbsp. oil, and cook noodles according to instructions on package. When noodles are cooked, strain, run cold water over noodles in strainer till noodles are cold, drain and set aside.
- When potatoes are soft, add noodles to potatoes and stir.
- Add another cup or two of water to the krumplis tészta and stir.
- Taste and adjust salt if needed. Enjoy!
